Weekend recipes

I decided to bake pretzels on our rainy Sunday. They came out more like bagels, but they still tasted so good! DH took two before I could get this snap. Next time I probably will just shape them into bagel shapes. It would be faster than boiling and baking real bagels, and they would make excellent sandwich alternatives.

I also created a new meatball recipe inspired by a recipe from Giada which I modified to suit my family's tastes. Her secret, shred rather than chop the onion. The pain was worth the gain! I don't think my eyes ever welled up that badly before but shredding the onion really helped infuse the flavor throughout the meatball. I also used her tip, mixing in the meat last, so it doesn't over mix. They were the perfect compliment to our spaghetti supper.

I've also discovered I love honey lemonade. I needed an alternative to just drinking water and this is a better option than sugar sweetened. I'm using local honey with the hopes it will help my seasonal allergies. A spoonful a day hopefully will keep the hay fever away?

Honey Lemonade - Add equal parts of fresh lemon juice and locally produced honey into a jar with a tight fitting lid. Shake the honey and lemon juice together, and add a spoonful or two, to your glass of water. Keep the jar refrigerated and it should last a week or two. (Honey will keep forever, but lemon juice needs the refrigeration.) This mixture also tastes really good when added to a mug of hot water.

Meatballs
1 small onion, grated not sliced
1/3 C Italian bread crumbs
2/3 C Parmesan cheese
1 t Italian seasons
1 t garlic powder
1 egg
1/2 pound of ground beef
1/2 pound ground Italian pork sausage

-Preheat oven to 400
- In a large bowl, add everything except the meat. Mix very well together and then add meat last, taking care to not over mix. 
- Roll into balls and place on a foil lined baking sheet
-Bake for 15-20 minutes

Like Bagel Pretzels

1 package of active dry yeast (1 T)
1 1/2 C warm water
1 T brown sugar
4 C flour (a little more may be needed to get the dough just right depending on your humidity)
1 beaten egg
coarse salt

-In a large bowl, dissolve yeast in warm water. Add sugar and flour and knead until the dough is more soft than sticky. You may have to add a little more flour but do so slowly.
- Allow the dough to rest and rise 30 minutes.
-Preheat oven to 425
-Cut the dough into 12 pieces and roll each one into a rope, curving and twisting to form your desired pretzel shape.
-Brush on egg wash and add coarse salt if desired.
-Bake for 12-15 minutes until browned.
Serve with cream cheese or mustard! Yum!

The recipes sound wonderful. When I have a sore throat I drink hot lemon tea which is hot water, lemon juice and honey. My Mum told me a story about her allergies; I never knew she had allergies until she told me the story. Mum said that she had allergies so bad that she would wet one handkerchief after another and the water would just run out of her eyes trying to work. She read in a magazine about eating raw honey, a spoonful a day. She tried it and she cured her allergies. She told me it took about a year, and she took the spoonful of honey regularly. So it worked for Mum.

Fresh pretzels are sooo good. When I went to our local library I borrowed a cookbook that has recipes made for pretzels, everything from your basic pretzels to making sandwiches with them and even dessert type items. It is called

Then I'd have to clean it. Its easier to rinse off the hand grater.
