Berry Good Wheat Waffles

So good, I wanted to eat two!
(no lemons in recipe- I should have moved them out of the shot.)

Berry Good Wheat Waffles

1 egg
3/4 C light vanilla soy milk
2 T apple sauce
1-2 t cinnamon
2 t baking powder
1-2 t brown sugar
1 C whole wheat pastry flour

Whole blueberries (frozen work) and dried cranberries

Spray your waffle iron with non-stick spray and heat the iron to high.

Beat the egg and soy milk until frothy and add the rest of the ingredients, except for the berries.

Once your waffle iron is hot, add about 3/4 C of batter onto the iron and then drop whole blueberries and dried cranberries on top. Close the iron and bake for about 4 minutes or until steam no longer comes out from the waffle iron.

Eat right away or cool on a wire rack to freeze for later. This recipe makes 4, but you could easily double the recipe.

Sounds good! I should make a point of making waffles more often.

They look delicious !!! I need to buy a better waffle maker, got my as a gift and it doesn't work very well - it was bought at Walgreens. Appreciate the thought but the quality isn't there
