Burger Bites

My family is going crazy for these lately. The boys have fun assembling them with their favorite toppings.  I use an indoor grill pan. They are probably too small for an outdoor grill.

Burger Bites

- 1 1/2 pounds ground meat or "not meat" of your choice

- garlic powder, pepper, sea salt, other seasonings you like

- 1/2 C or so of frozen chopped onion

- a frozen bag of Ore Ida Cottage Fries (we like to call them circle fries)

- toppings such as; lettuce, mustard, ketchup, sliced grape tomatoes, guacamole, ranch dressing, A-1 sauce etc.

Bake the Cottage Fries in a single layer on a cookie sheet according to the package instructions.

Mix together ground meat (veggie burger mix) with your choice of seasonings and form tiny patties, very flat, fitting in the palm of your hand.

Heat a grill pan to medium and cook the burger patties together with the frozen chopped onion.

Assemble the burger bites using the baked Cottage Fries instead of buns and add whatever toppings you like. We skip on cheese, but you could add cheese and use the broiler to melt it onto the burgers before you assemble them. These would make fun appetizers for a party too!
