The recipe called for mini chocolate chips, but I noticed at the grocery store, these chips were .50 more than the regular chocolate chips. Tightwad that I am, I couldn't bring myself to pay the extra .50 cents for the same amount of chocolate.
I used my stone 9 x 5 bread pan, but when I make this again, I'll use my silicon pan. I greased it, but the bread still stuck a little. I think it was all the chocolate chips at the bottom.
It still tastes super yum-o. I will have to wrap it up and hide it from myself or there won't be any left for DH to try.
Chocolate Chip Whipped Cream Loaf
1 1/2 C flour
1 C sugar
2 t baking powder
1/2 t salt
1 C heavy whipping cream
2 eggs
2 t vanilla
1/2 C mini chocolate chips ( or regular chips if you want all your chocolate at the bottom!)
Preheat oven to 350 F
-Grease a 9 x 5 loaf pan
-Combine flour, sugar, baking powder, salt
-Toss the chocolate chips into the flour mixture and set aside
-Beat cream on high until soft peaks form
-add eggs, vanilla
-Stir in the flour mixture
Bake for 55 minutes or until your knife comes out clean.

Melt the white chocolate stir in candy spread on wax paper cool in fridge
I tried semi sweet and milk chocolate..it isn't as good (I think).
Hmmmm, as long as it tastes good that's all that matters.

Dawn, you can always cut a piece a waxed paper to line your baking pan and the bread will not stick to the bottom. I do this when I may layer cakes.:)

note about the chips: You can always put them in a chopper/processor before adding them to your mix:)
