Chocolate Oatmeal No Bake Cookies

Description:
Very yummy! A great summer time cookie because you don't have to turn on the oven. You must allow them to cool and set before enjoying.

Ingredients:
2 C sugar
1/2 C milk
1/4 C cocoa
1 stick of butter (1/2 C)

1/2 C peanut butter
3 C oats (quick or regular)

Directions:
Mix the sugar, milk, cocoa and butter in a sauce pan, over medium heat. Allow the mixture to come to a boil and cook for 1 minute. Remove from heat and stir in peanut butter. Once peanut butter is melted, stir in oats. Drop by cookie scoop or spoonful onto a silicon baking sheet or waxed paper. Allow to cool and set completely.

I have SO MANY memories of no-bake chocolate oatmeal cookies, from all the way back to Junior High School. They are THE BEST, and easy to do when you have friends over. My friend Elaine and I could make an entire batch disappear in one evening!! Same recipe, by the way. I know it by heart.
