Description:
Experimenting with trying to make a low fat, low sugar, chocolate baked treat, I created these moist, yummy muffins.
Ingredients:
2 L eggs
1 t vanilla
1/2 C brown sugar
1/2 C apple sauce
1 1/2 C shredded zucchini
1 C flour
1/2 C cocoa powder
1 t baking soda
1/4 t baking powder
1/2 t cinnamon
1/2 t pumpkin pie spice
3/4 C chocolate chips
Directions:
Mix the eggs, vanilla, apple sauce and brown sugar.
Stir in the zucchini.
In a separate bowl, mix the flour cocoa powder, baking soda, baking powder, cinnamon and pumpkin pie spice. Mix in the chocolate chips.
Add the dry ingredients to the wet ingredients and stir until combined.
Spray a muffin tin with non-stick spray. Fill muffin cups with 1/2 c of batter.
Bake in a preheated 350 oven for 25 minutes or until set.

Ooooo I meant that in a good way not that they looked bad
I'm not big on chocolate but they might be pretty good with some other chips mixed in the batter....like butterscotch or maybe the white chocolate
