I wasn't planning on baking anymore Christmas treats, but after a wonderful discussion with a friend on the many different recipes available, I now will HAVE to make a batch of fudge for Christmas. Technically, it won't be baking. My favorite recipe is the sweetened condensed milk, melted chocolate chips, pecans and dried cranberries. I like fudge to be melt in your mouth smooth, not grainy.

Line a 8 x 8 or 9 x 9 or other similar sized dish with foil, overhanging the edges. In a microwavable bowl, mix together a 12 ounce bag of semi-sweet chocolate chips, or other chips of your choice, with 1 can of sweetened condensed milk. Heat on high for a minute and stir. Heat another minute and stir again. As soon as the chocolate chips begin to melt, stop microwaving and stir in 1 t of vanilla, 1 C of chopped pecans, or other nuts of your choice, and 1/3 c of dried cranberries or other dried fruit. Set your fudge in the refrigerator in the foil lined dish. When chilled and set, lift the fudge out of the pan using the overhanging foil edges. Now you can slice through it with a pizza cutter making little squares. This fudge is melt in your mouth smooth, not grainy. You can easily add your choice of nuts or dried fruit in amounts that suit you. I store the fudge in Christmas tins in the fridge.
