Maija's Roasted Pumpkin Seeds

Maija gave me this recipe years ago and it makes seeds you actually want to eat. In years past, I've tried to roast them, but they didn't taste spectacular. Maija's secret of soaking in salt water really makes the difference!


Roasted Pumpkin Seeds

2 C water
1/4 C salt
2 C pumpkin seeds

-Heat the water and the salt until salt is dissolved.
-Cool and add pumpkin seeds
-Soak overnight
-Drain and pat dry
-Spread on a cookie sheet and bake for 1 hour at 300F

Store in an airtight container and they will last a long time. That is if, you don't eat them all first!

I have always soaked my seeds in salt water too before baking them but have never tried the heating the saltwater first - this year I' give it a try - thanks for sharing!

(Even if I would have had a peek here anyway, I couldn't help checking this out when I saw the name Maija there, as it's my middle name and I've not heard it'd be in use a lot abroad.)

Don't mind at all!! I would love to take credit for this awesome recipe, but I think that I found it online! But it is definitely the BEST pumpkin seed recipe ever!!! Now I have a taste for pumpkin seeds!
