Quick and healthy

I used leftovers from our taco bar to whip up a healthy, quick lunch. I layered brown rice, mashed sweet potato, tomato salsa, green pepper, black beans, a little cheddar cheese and flavored with cumin and pepper. Nuked a minute and a half and wha-la... guilt free lunch!
